I Sydeuropa har dorader altid været betragtet som en stor delikatesse og således en højværdi fisk.
Doradens kød er hvidt med en saftig og lækker smag.
Kendetegn
Doraden har en oval form med store øjne. Langs siden løber en gylden linje som også ses omkring dens øjne. Dette er også årsagen til dens tyske navn; Goldbrasse.
Levevis
Opdræt af dorader blev påbegyndt først i 1980'erne i Frankrig, Grækenland og Italien. Fra midten af 1990'erne tog udviklingen i opdrættet af havbars fart. Yngel opdrættes i recirkulerede opdrætsanlæg på land, og senere udsættes fisken til videre produktion i havbrug med netbure.
I naturen lever doraden i søgræs på sandet bund i dybder ned til ca. 30 meter. Voksne eksemplarer er set helt ned til 150 meters dybde. Den lever af muslinger, østers og andre skaldyr. Om foråret kan doraden ofte findes i laguner nær kysten. Tilberedes dampet, stegt, kogt eller bagt.

Vi bestræber os på altid at købe fisk fra de mindre kuttere, som ofte kun er på havet i 1 til 2 dage.
Og hovedparten af fiskene købes primært på de nordjyske auktioner i Strandby, Skagen og Hirtshals.
Hensynet til variation i pakkerne og dårligt vejr betyder, at vi i løbet af sæsonen også køber fisk fra bl.a. Norge, Island.
